Merguez is a red, spicy mutton or beef based fresh sausage from Maghrebi cuisine. It's popular in the Middle East and Europe, having become particulary popular in France by the closing decades of the twentieth century.
Merguez is made with uncooked lamb, beef or a mixture stuffed into a lamb-intestine casing. It's heavily spiced with cumin and chili pepper or harissa - which gives it its characterisitc piquancy and red color, as well as other spices such as sumac, fennel and garlic. It's like a powerhouse of spicy and earthy flavor, making it one of the tastiest sausagues around.
It's usually eaten grilled or also in sandwich with french fries. Also one of the usual way cooking in stews (tagines) with vegetables, meat or couscous.
