This duck foie gras is prepared so that the veins and membrane have been extracted, which is perfect to prepare it as a foie gras terrine. The finest duck foie gras arrives raw and can be cooked to serve on warm toast. It has a deliciously smooth and buttery texture that pairs perfectly with crusty bread, lightly season and fry the foie gras to spread over warm ciabatta to enjoy.
Cooking tips: To cook as terrine, season your foie gras on each surface with some alcohol, salt, and pepper, then put it in a terrine-style mould, press well, and cook in a bain-marie for 45 mins at 90�C, then add weight on the top and keep in your fridge for a night before cleaning the mould and storing.
