From Brittanny, Vendée, Normandy or the Marennes Oléron basins: she is easily recognizable thanks to her round and deep shell hiding her abundant flesh.
 
The David Hervé team will choose (or not) to produce her, the main point is that the producers decide according to strict quality criteria, and the benefit of a privileged partnership.
 
Selected in places where the plain water meets the salted water. She extracts from this exclusive environment important nutritional benefits which develop and feeds harmoniously by her flesh.
 
For 3 and a half years she will have the chance to feed directly from the open sea and won’t need to go to oyster beds. Its sweet taste will bring a very fine flavour, a nutty aroma can also be found… She is therefore incredibly sweet and pleasant, an excellent introduction for a novice or a child who would like to try oysters.
